Preserving Traditional Distilling Techniques

Most of the practices that defined whisky production a century ago have been replaced. A small number of distilleries retain them, and those sites constitute a working record of industrial method that would otherwise survive only in photographs and written accounts.

Floor Malting

Floor malting involves steeping barley, spreading it across a stone or concrete floor and turning it by hand with wooden shiels for several days while it germinates. The method is labour-intensive and its output is small relative to a modern drum maltings. Fewer than ten distilleries in Scotland maintain working floor maltings, generally producing a fraction of their own requirement.

Worm Tubs

The worm tub, a coiled copper pipe submerged in a vat of cold water, was the standard condenser until shell-and-tube units replaced it from the 1960s. It offers less copper contact than the modern alternative, and distilleries that retain worm tubs do so because that difference is documented in their production character. Roughly a dozen Scottish distilleries continue to use them.

Wooden Washbacks

Fermentation vessels of Oregon pine or larch are harder to clean than stainless steel and require regular repair by a cooper. Where they are retained, the resident microbial population within the wood is documented as contributing to fermentation, and extended fermentation regimes such as the 75-hour period recorded at Lagavulin are frequently associated with them.

Coopering

Coopering is the oldest surviving trade within the industry. A cooper shapes, raises, fires and hoops a cask without adhesives or fasteners, relying entirely on the compression of shaped staves. Working cooperages in Scotland maintain formal apprenticeships lasting four years, and the trade is recognised as a heritage skill.

The Heritage Argument

The case for retaining these methods is documentary rather than commercial. Written descriptions of industrial process are incomplete without the practice itself, and once a skill ceases to be performed it cannot be reconstructed accurately from records alone. Distilleries that maintain older techniques function, in effect, as operating industrial museums that continue to produce.

A technique that is written down but no longer performed has already been half lost.

Preservation also extends to the buildings. Charles Doig's pagoda-roofed kilns, Category B listed structures such as Easter Elchies House, and Victorian warehouse ranges are protected under heritage legislation, and their retention documents the architectural history of a rural industry as clearly as any written archive.
