Traditional Copper Pot Distillation

The alembic, the ancestor of the pot still, is documented in the work of scholars writing in Arabic between the eighth and tenth centuries. The apparatus consists of a heated vessel, a head that collects vapour and a descending arm that carries it to a cooled condenser. Every pot still in operation today retains that three-part structure.

The technology entered Europe through Al-Andalus and the translation schools of the Iberian peninsula, and was recorded in the medical literature of Salerno and Montpellier by the twelfth century. Monastic houses across Europe adopted it, and from there it reached Ireland and Scotland.

Why Copper

Copper was selected initially for practical reasons: it is malleable, can be worked into curved forms by hand and conducts heat efficiently over a direct fire. Its retention long after those constraints eased reflects a documented chemical function. Copper reacts with sulphur compounds formed during fermentation and distillation, removing them from the vapour stream as copper sulphide deposits on the interior surface.

Copper is not a container for the process. It is a participant in it.

Because that reaction consumes metal, stills wear from the inside. Coppersmiths historically repaired stills by patching thinned sections, and complete replacement on the same dimensions remains standard practice where a distillery wishes to preserve its documented spirit character.

Geometry and Reflux

Still shape determines how much vapour condenses before leaving the still and returns to be redistilled, a process termed reflux. Tall stills with long necks produce greater reflux and a lighter spirit; short, squat stills produce less and a heavier one. Glenmorangie is historically documented as operating the tallest pot stills in Scotland at 5.14 metres, while Lagavulin distils in small, onion-shaped stills.

The angle of the lyne arm, which carries vapour from the still head to the condenser, has a comparable effect. An upward-angled arm increases reflux; a downward-angled arm reduces it. These are fixed dimensions, and a distillery that alters them alters its output, which is why still replacements are typically exact copies.

Batch and Continuous

The pot still is a batch apparatus. Each charge is distilled, the still is emptied and the process repeats. Aeneas Coffey's continuous column still, patented in Dublin in 1831, allowed uninterrupted operation at high strength and much lower cost. The two technologies did not replace one another; the column still supplied grain spirit for blending while the pot still remained the basis of malt and Single Pot Still production.

Condensing methods also diverged. The worm tub, a coiled copper pipe submerged in a vat of cold water, offers less copper contact than the shell-and-tube condensers that replaced it from the 1960s. A small number of distilleries retain worm tubs specifically because that difference is documented in their production records.

Still houses are among the few industrial interiors where the equipment of 1880 and the equipment of today are dimensionally identical.

The pot still therefore represents an unusual case of technological continuity: a design established in the medieval period, refined rather than superseded, and preserved in working condition because its physical proportions constitute part of the historical record.
