Japanese whisky production begins with a documented act of study. In 1918 Masataka Taketsuru, the son of a sake-brewing family in Hiroshima, travelled to Scotland and enrolled at the University of Glasgow. Over the following two years he worked at several Scottish distilleries and recorded his observations in a set of notebooks that survive as the technical foundation of the industry in Japan.
Those notebooks are unusually detailed. They document still dimensions, mash temperatures, fermentation times, washback construction and warehouse practice. Taketsuru's purpose was not to import a finished product but to transfer a complete production method to a country with no distilling tradition of its own.
Yamazaki, 1923
On his return, Taketsuru was engaged by Shinjiro Torii, a merchant who had built a business importing and blending western drinks. Torii's commercial ambition and Taketsuru's technical training produced the Yamazaki Distillery in 1923, sited at the confluence of three rivers in the Osaka prefecture. It was the first malt whisky distillery in Japan.
The founding of Yamazaki in 1923 was the transfer of an entire industrial method across ten thousand kilometres.
The partnership between the two men ended in the 1930s. Taketsuru moved north to Hokkaido, where the climate and landscape more closely resembled Scotland, and established his own distillery at Yoichi in 1934. The divergence between the two enterprises established the two principal lineages of Japanese whisky production.
A Different Industrial Structure
Japanese producers did not develop the reciprocal trading system that characterises the Scotch industry, in which distilleries exchange stock for blending. Each Japanese company therefore had to generate internal variety within its own sites. This structural constraint is historically documented as the reason Japanese distilleries operate multiple still shapes, several yeast strains and a range of fermentation regimes under one roof.
The Hakushu Distillery, opened in 1973 in the forests of the Southern Japanese Alps, and the Chita grain distillery in Aichi extended that internal range further. Assemblages such as Hibiki draw on components from all three sites.
Mizunara and Climate
Japanese oak, Quercus crispula, known as Mizunara, entered use during the Second World War when imported casks became unavailable. The timber is porous and difficult to work, and casks made from it are recorded as prone to leakage. Its continued use after the war reflects a deliberate decision to retain a distinctly Japanese material within the production process.
Japan's four distinct seasons produce a wider annual temperature range than that of maritime Scotland. Production literature documents this as a significant influence on the rate of interaction between spirit and cask, and warehouses at different altitudes are used to vary those conditions systematically.
Regulation and Definition
For most of the twentieth century the term Japanese whisky carried no statutory definition. In 2021 the Japan Spirits and Liqueurs Makers Association introduced labelling standards requiring that whisky described as Japanese be fermented, distilled, matured and bottled in Japan, with a minimum maturation period of three years. The standards are industry-adopted rather than legislated, and represent a formalisation of practice a century after Yamazaki opened.
A century after the first still was commissioned, the category acquired a written definition.
The historical arc is consistent: a period of systematic study and replication of Scottish method, followed by the progressive development of a distinctly Japanese approach emphasising precision, restraint and the seasonal calendar.
